Chocolate Chip Banana Bread

There are many Banana Bread recipes out there, but this one using our fresh sour cream is a step above the rest.

Ingredients:

  • cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Kosher Salt
  • 3 Ripe Bananas
  • ¼ cup Neutral Oil vegetable, avocado, etc.
  • ¼ cup Prairie Farms Lactose-Free Sour Cream
  • 1 Large Egg
  • 1 Egg Yolk
  • ¼ cup Honey
  • 2 tbsp Sugar
  • 1 tsp Pure Vanilla Extract
  • ½ cup Semi-Sweet Chocolate Chips

Directions:

  • Preheat oven 325ºF. Prepare a loaf pan by coating with oil, and adding a strip of parchment paper long ways to the bottom and sides of the pan. Set aside.
  • In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, add bananas, and using a hand mixer, mash them up. Add the oil while mixing on medium speed. Add the eggs, egg yolk, honey, sugar, and vanilla extract. Beat until smooth.
  • Add the dry ingredients to the banana mixture. Beat on low speed until only a few traces of flour remain. Fold in the chocolate chips.
  • Pour the batter into the prepared pan, sprinkle a few chocolate chips on top. Bake for 40 minutes, or until just baked through. Leave to cool in the pan for 10 minutes, then remove and place on a wire rack to cool completely, then enjoy!
