Pumpkin Bars with Cream Cheese Frosting

Ingredients:

Bars

  • 4 eggs
  • 1 2/3 Cup sugar
  • 1/2 Cup vegetable oil
  • 1/2 Cup Prairie Farms Pumpkin Spice Milk
  • 16 oz Pumpkin Puree
  • 2 Cups flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg

Cream Cheese Frosting

  • 4 oz Prairie Farms cream cheese, softened
  • 1/2 Cup Prairie Farms Salted Butter, softened
  • 1 1/2 tsp vanilla
  • 2 Cups powdered sugar

Directions:

  • Preheat the oven to 350°F. Grease a 15x10” baking pan with Prairie Farms Salted Butter and set aside.
  • In a large bowl, beat eggs, sugar, oil, Pumpkin Spice Milk and pumpkin until just combined. Set aside. In a medium sized bowl, sift together all dry ingredients: flour, baking powder, cinnamon, salt, baking soda, and nutmeg.
  • In the large bowl, combine wet and dry ingredients until just combined. Be careful not to overmix. Pour in prepared baking pan, spreading evenly, and bake for 25 minutes. Until lightly browned and a toothpick comes out clean. Allow to cool completely.
  • For the Frosting: Mix together the cream cheese, butter and vanilla. Once combined, gradually add in the powdered sugar, beating until smooth and creamy. Frost on cooled pumpkin bars. Cut into squares to serve and enjoy!
