Smashed Potatoes with French Onion Dip

Ingredients:

  • 1 lb Small Potatoes
  • 4 tbsp Prairie Farms Butter melted
  • 1 tsp Kosher Salt
  • ½ tsp Freshly Ground Black Pepper
  • 1 tsp Paprika
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • ¼ tsp Cayenne Powder

Directions:

  • Prepare a large baking sheet pan by lining with parchment paper. Set aside. Preheat oven to 425ºF.
  • Fill a large pot with water and generously salt. Add the potatoes (start with cold water to ensure even cooking). Bring the water to a boil, and boil for 10-15 minutes until potatoes are tender. A fork should easily be able to pierce the potatoes. Remove from heat, then drain water.
  • Add the boiled potatoes to a large bowl, then add melted butter and spices. Toss to coat potatoes completely.
  • Add potatoes to prepared sheet pan. Use a potato masher, flatten each potato, leaving about a ½-inch of space between each potato.
  • Add to oven and bake for 20-25 minutes, until crispy on the outside. Remove from oven and serve with Prairie Farms French Onion Dip. Enjoy!
