Preheat oven 325ºF. Prepare a loaf pan by coating with oil, and adding a strip of parchment paper long ways to the bottom and sides of the pan. Set aside.
In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, add bananas, and using a hand mixer, mash them up. Add the oil while mixing on medium speed. Add the eggs, egg yolk, honey, sugar, and vanilla extract. Beat until smooth.
Add the dry ingredients to the banana mixture. Beat on low speed until only a few traces of flour remain. Fold in the chocolate chips.
Pour the batter into the prepared pan, sprinkle a few chocolate chips on top. Bake for 40 minutes, or until just baked through. Leave to cool in the pan for 10 minutes, then remove and place on a wire rack to cool completely, then enjoy!
