Peel and decore apples. Chop into small cubed pieces, add to a small bowl then pour lemon juice on top to prevent browning.
In a small pot, stir together cornstarch, cinnamon, nutmeg, salt and water. Add to stove and bring to a simmer over medium heat.
Simmer mixture over medium heat until bubbles form. Stir in apples. Cover with a lid and cook until apples are soft, stirring occasionally. Remove from heat.
Assemble your sundae. Scoop ice cream into a bowl. Spoon apple pie filling over top. Sprinkle Graham Cracker Crumbs on top, then drizzle on caramel sauce. Garnish with waffle cone shards and enjoy!
